As a boy in upstate South Carolina, Greg Johnsman learned the process of milling grits the old-fashioned way from a 3rd-generation miller named Jack Brock. Greg’s wife Betsy has been farming with her family on the sea islands in the Lowcountry for her entire life.

Today, at their farm Marsh Hen Mill, they harvest and mill heirloom grits and grains. The varieties range from Jimmy Red corn to Sea Island Blue to Unicorn grits (they’re pink!).

Ramps, aka wild leeks, are one of the members of what we call the Spring Trilogy. While related to leeks, the flavor of ramps is a bit more pungent, but never overpowering. Long prized as an abundant and sustainable food source in Appalachia, the harvest signaled the end of the long and cold winter months, providing a welcome and much needed tonic.
