Wallpaper Wednesday…we end on a delicious note with Chocolate persimmons!

Chocolate persimmons are pollination-variant, that is, the seeds they develop release alcohol which makes the tannins in the flesh clump together, creating the burnt umber color and making them non-astringent. There are several different varieties of Chocolate persimmons, and they are all delicious, with a richer flavor than either Fuyu or Hachiya. The burnt umber flesh is edible while still firm like a Fuyu.

Use them fresh to feature their rich color, since they have enough flavor to carry a dish, like a salad, all on their own.
