While an onion is described as a kitchen workhouse, the shallot is described as elegant with a complex flavor. Sure, they are tiny, but don't let that fool you. Shallots are reserved for your VIP onion needs, such as in a vinaigrette, a buerre blanc, or caramelized whole.

A small amount of a fine brunoise of raw shallot also adds a bit of crunch and that eyebrow raising "what is that ingredient" to finish a creamy soup, too. Read on as we go on a journey between shallots and onions. 🧅
