Looking at it, you would think fennel is related to celery, but it is in fact, related to the carrot. There is a seed variety and a vegetable variety. The vegetable you eat is commonly “Florence fennel” (Foeniculum vulgare) is sweet and has that classic edible swollen stem. It is also referred to as Finocchio or Anise and is available as a full size or as a baby vegetable.

Fennel tastes like licorice, and the dried seeds are used as a spice to flavor meats and sausage, sweet treats, breads, cheeses, or liquor. The bright yellow fennel pollen can also be used in dishes.

Fennel can be used raw or cooked. When raw, it is generally sliced thin and marinated into a slaw or added to salads, which adds a bright, fresh licorice flavor to the dish. This is an ideal vegetable to cook as the texture is retained. It can be sliced or cut into halves or quarters, and then roasted, braised, or sauteed.  The flavor becomes mild and it is a great side dish to fish or poultry.

Recommended Storage

The recommended optimum storage temperature is 32° – 40°F. Keep them covered, as they are susceptible to wilting when allowed to dehydrate. We recommend you store them in the coldest part of your cooler. The temperature fluctuates from the front to the back of the cooler due to the location of the cooling unit and frequency of the door being opened. Download our PDF for more cooler storage hints.
