The Tromboncino Squash, also known as Zucchetta Rampicante, the climbing squash, is generally only found in backyard gardens. This heirloom variety originates from the Northern Coast of Italy and continues to be popular amongst Northern Italians and Europeans. The Tromboncino has a long, seedless neck, with a bell shaped head.
Most summer squash have a bush-habit growth however the Tromboncino Squash has an aggressive climbing nature like most winter squash, and can reach lengths up to three feet long! When harvested from four to 12 inches the squash is used similarly to Zucchini and when any longer is best roasted. A young Tromboncino is pale green and as it matures, it develops into a beige hue.
The Tromboncino is similar to a Zucchini but enjoyably sweeter. It is related to the Butternut Squash but is less nutty and has much lower moisture content. Many chefs enjoy this sweet, slightly nutty squash because it holds its shape well when cooked and brings color to dishes. Try the Trombino Squash; the soft texture and light, sweet flavor brings the joy of summer squash to your mouth. You will taste the difference!
