These mushrooms do not have gills, but they do have teeth or at least small, tooth-like projections on the under-side of their caps. Also known as Sweet Tooth mushrooms, they can be found in the wilds along the Pacific Coast in winter some growing on trees as shelves, others on the ground in colors so vibrant they can be used to dye wool. These fleshy, buff-colored delicacies have often been compared to the Chanterelle in flavor. This is a chewy mushroom — great sautéed and scattered over steaks and chops. They are also a perfect ingredient in cooking sauces and casseroles where they’ll add a wild and woodsy flavor. The fresher and blonder, the better the flavor. Now in season, you can use Hedgehogs as a substitute for Chanterelles.
