Description:

The Finger Lime is a highly unusual citrus variety, native to Australia and found as bushes or small trees in the rain forests of Queensland and New South Wales, Australia.  The Finger Lime’ s skin color ranges from yellow or brick red to green or purplish black.  When the fruit is cut in half (cut across the fruit, not down the length), and rolled between your thumb and forefinger, the juice cells (vesicles) roll out of the fruit.  The vesicles are round rather than elongated and look like tiny translucent dragees.  They are greenish-white or pinkish or sometimes even reddish, and pop in your mouth like caviar like little lemon-lime flavor bombs. Use Finger Lime vesicles (but call them Lime pearls or citrus caviar) to add citrus zip to any dish that would benefit from a squeeze of Lemon or Lime.
