You have seen GREEN GARLIC on the menus of some of our country’s finest restaurants, and you have thought that all GREEN GARLIC is the same. Not so! A small family farm in Southern California is harvesting PURPLE VARIETY GREEN GARLIC, and at least for now, it is quite a bit smaller than traditional GREEN GARLIC. Purple garlic varieties pack more punch than the white varieties, but when still in the green stage, the purple garlic flavor is still fairly mild, yet complex. While GREEN GARLIC is usually stewed or braised and featured in soups, broths, and sauces, our very young PURPLE VARIETY GREEN GARLIC would be wonderful grilled and tossed with Roasted Root Vegetables or added to a Grilled Vegetable Salad. Or saute PURPLE VARIETY GREEN GARLIC for a Warm Arugula Salad with Thyme Garlic Vinaigrette. Treat them like very flavorful green onions, and enjoy!
